Homemade tomato sauce
Ingredients:
Large tomato
Italian seasoning
Salt & pepper
Chop the tomato and cook it on medium heat for about 20 minutes, until it's basically tomato soup. Stir frequently. As it thickens up, add in Italian seasonings (like oregano, basil, rosemary, etc.) and salt & pepper to taste. Remove from heat and let it sit uncovered while you prepare the pizza.
Pizza
Ingredients:
Large portobello mushroom cap
Chopped broccoli
Chopped onion
Mozzarella
Cooking oil
Preheat the oven to 400F. Wash and chop all of your toppings. Oil the top of the mushroom cap and place it oil side down on a baking pan/sheet. Use a spoon to ladle your tomato sauce onto the mushroom, then add your veg and top with mozzarella cheese. Bake for about 20-40 minutes. A good indicator is when the cheese is starting to get that golden brown color we love on traditional pizzas.
All of the ingredients are safe to eat raw, so no worries if you under cook it. You can always take it out to try it and decide it has to go back in for a bit longer.
